2016 William Church Quintessence Vineyard Reserve Cabernet Sauvignon

What is it? 100% Cabernet Sauvignon 

How was it made?  During fermentation must caps were punched down twice daily until ideal tannin structure was achieved The wine aged in French oak, 66% which was new.

What does it taste likeAromas of rich red fruit, blackberries and tobacco extend through the palate. Richness is balance by tension of acidity and integrated tannin

2017 Tinte Cellars William Church Red Blend

What is it? 61%Merlot, 18% Cabernet Sauvignon, 8% Petit Verdot, 8% Malbec, 5%Cabernet Franc

How did we make it? During fermentation must caps were punched down twice daily. 43% of the wine aged in new French oak.

What does it taste like? Aromas of toffee over red fruit, cedar, and tea leaves. The dynamic structure of the wine allows for aging or enjoyment now.

Pairings? Braised meat, roast vegetables, richly spiced food

2020 Tinte Cellars Rosé of Counoise

What is it?  100% Counoise, pronounced “koon-WAHZ” a varietal originating from southern France.

How was it made?  Whole cluster pressed and fermented in a concrete egg with yeast isolated in Bandol, France.

What does it taste like?  Flavors of stone fruit are complemented by faint guava and grapefruit and aromas of rose and peach

How did we make it?  Whole cluster pressed and fermented in French oak, stainless steel and acacia barrels. Weekly lees stirring, helped develop aromas and mouthfeel.

What does it taste like?  Aromas of citrus, white flowers and flint, shape this refreshing white wine.
