What is it?  100% Counoise, pronounced “koon-WAHZ” a varietal originating from southern France.

How was it made?  Whole cluster pressed and fermented in a concrete egg.

What does it taste like?  Flavors of stone fruit are complemented by faint guava and grapefruit and aromas of rose and peach

2021 Sauvignon Blanc

What is it?  100% Sauvignon Blanc

How did we make it?  Whole cluster pressed and fermented in French oak & stainless steel. Weekly lees stirring, helped develop aromas and mouthfeel.

What does it taste like?  Aromas of citrus, white flowers and flint, shape this refreshing white wine.

Pairings: Oysters, grilled chicken, ceviche

2018 Bishops Blend

What is it? 43% Cabernet Sauvignon, 34% Syrah, 16% Mourvèdre, 4% Petit Verdot, 3% Grenache

How was it made? Aged 21 months in oak, 17% new French, 7% new American. 32% in Puncheon

What does it taste like? Aromas of fruit leather and baking spice complement savory notes of smoke and coffee. Medium bodied. 

Pairings? Drink on its own, pizza, grilled foods

2018 Ramblers Red Wine

What is it? 57% Merlot, 23% Cabernet Sauvignon, 8% Petit Verdot, 6% Cabernet Franc, 6% Malbec

How did we make it? This wine aged in French oak, 41% which was new, for 21 months.

What does it taster like? Stone fruit, plum, orange blossom, cedar, violet, and mushrooms. An elegant wine with soft tannins.

Pairings? Duck Confit, Lamb, Alsatian tart

2018 Irish Eyes Red Wine

What is it? 41% Grenache, 39% Syrah, 20% Mourvèdre

How did we make it? Matured in French Oak, 20% of which was new for 16 months.

What does it taste like? Aromas of blackberry, figs, black olive, and sarsaparilla, enhance plum, smoke, leather, and orange peel flavor of this medium bodied wine, with well-balanced acidity and tannin
